Cob Loaf









  • Preparation Time:10 minutes
  • Cooking Time:30 minutes
  • Serves:6

Ingredients:

  • 1 cob loaf or 8 individual crusty rolls
  • 600gms minced beef
  • 1 large onion, finely chopped
  • 2 tb tomato paste
  • 4 tb gravox
  • 1 cup water
  • 1/4 cup tomato sauce
  • 1/3 cup barbecue sauce
  • 2 tomatoes sliced
  • 2 cups grated cheese
  • oil for sauteing
  • salt and pepper

Method:

    Preheat oven to 200 degrees celsius.

    Cut the top off cob loaf about a 1/4 from the top, carefully pull out the bread from the roll, tear up into small pieces and place aside.

    Press grated cheese firmly into the bottom of the loaf covering all the base then layer tomato slices on top.

    Saute onions in a little oil or butter until soft then add mince and brown.

    Add tomato paste, sauces, water, gravox and seasonings. Stir until combined and simmer for 10 minutes or until very thick .

    Stir in bread chunks and simmer for a further 2 minutes.Pour mixture into the loaf pressing firmly into the sides of the loaf.Place top on.

    Cover in foil and bake in the oven for 30 minutes.

    Cut and serve with a salad or vegetables.
