Pavlova - Always a Crowd Pleaser!

Pavlova was always a family favourite, being made to perfection by my mum. Every birthday, Christmas or any celebration her much desired pav would be made, and always the first dessert to be devoured. Bad luck if you were too busy in conversation, if you did not get to the pav straight away you would miss out and be left to fight over the crumbs on the plate.

Pavlova

5 egg whites
1 cup castor sugar
1 tspn white vinegar
1 tspn vanilla essence



Preheat oven to 180°C. Line an oven tray with baking paper.


Separate egg whites from yolks and be sure not to get any yolk in the white.






Place all ingredients together in bowl and beat until thick, and stiff peaks form.

Lower oven temp. to 150°C. 

Bake for 1 hour then turn off oven and allow to cool in oven.

When cooled cover with desired topping.

Most commonly Pavlova's are covered with cream and fruit. 

My mum always has cream and crushed peppermint crisps on the top and sometimes i like to drizzle chocolate across the top.
