Blackberry Clafoutis

Clafoutis can be made with different berries but i usually make it with blackberries as we have a lot of blackberry bushes nearby. This also tastes delicious with blueberries, but you can experiment with other berries like cherries.










300grm blackberries
1/2 cup milk (125ml)
1/2 cup cream (125ml)
80grm sugar
3 eggs
seeds from 1/2 vanilla bean (1 cap essence)
pinch salt
200grm ground macadamia or almonds
1 tspn flour
1 tblspn melted butter
1 tspn Grand Marnier or contreau
zest of 1/2 lemon
1 tspn sugar


Place the milk, cream, sugar, eggs, vanilla & salt into blender and using whisk mix for 1 min. Add ground macadamias and flour, followed by melted butter, liqueur, and lemon zest, blend for 1 more minute. Leave batter to rest 30 mins.

Pour batter into sweet pastry crust or ceramic baking dish. Place blackberries in about 1cm apart. Bake at 180 degrees celsius. After 15 mins sprinkle with sugar and cook for further 10 - 15mins.

Cool to room temperature and serve with cream or ice cream.
