Cucumber Yoghurt Dip



A great dip to have along side a hot n' spicy meal, to cool the tongue. Or just used as a dip with pita bread.




Ingredients:

1 medium cucumber
1 cup plain yogurt
1 small garlic clove, minced
1/3 cup finely chopped fresh mint leaves
Salt to taste

Peel and seed the cucumbers. Using the large holes on a grater, grate the cucumber into a small bowl. A handful at a time, gently squeeze the water out of the grated cucumber. Place the cucumber in the bowl and stir in the yogurt, garlic, mint, and salt.

So simple!
