Chicken Curry with Rice


Cooking Oil
salt & pepper
2 teaspoons mixed herbs
1 onion, diced
3 Tablespoons Curry powder
3 chicken breast diced
2 cups chicken stock
2 cans coconut cream
1 cup grated cheese
1 cup broccoli
3 cups rice


Heat oil in heavy saucepan.
Add onion, fry till clear. Then add curry & herbs and mix.
Add chicken and fry, coating in seasoning.
When chicken is cooked through add chicken stock & coconut cream, salt & pepper.
Bring to the boil and simmer.
Mix in grated cheese and simmer until the sauce thickens slightly.
Add broccoli about 5 minutes before serving. 

Cook rice while simmering.

Once ready place rice on plate and add the curry chicken with sauce on the top of the rice. The sauce will cover the rice and is the perfect combination.

I also made some herb bread to have on the side and it just went perfectly with this dish.
