Easy Chicken and Vegetable Curry Puffs

Ingredients


Pre heat oven to 180 degrees Celcius

Olive Oil
500 grms Chicken breast diced
1 can coconut cream
2 tablespoons curry powder
1 tspn chicken stock
1 cup water
1 cup mixed frozen vegetables (peas, carrots, corn)
6 sheets puff pastry approx.

Pavlova - Always a Crowd Pleaser!

Pavlova was always a family favourite, being made to perfection by my mum. Every birthday, Christmas or any celebration her much desired pav would be made, and always the first dessert to be devoured. Bad luck if you were too busy in conversation, if you did not get to the pav straight away you would miss out and be left to fight over the crumbs on the plate.

Easy Birthday Cake


I made this birthday cake in one morning, it is so quick and easy! My daughter asked for a cake covered in lollies (who doesn't love that). 

So first I made this One-Bowl Easy Chocolate Cake recipe. Click on Link below. It is great, you just throw all the ingredients in a bowl and mix! Gotta love that!


Then I just made up some chocolate icing which is made up of pure icing sugar, cocoa, teaspoon of butter and milk. Before placing it on the cake I heated it for about 15 seconds in the microwave for easy spreading and then threw on some lollies!

Christmas done, what's next?

So the count down is on, only a few days until the New Year!!

On top of the New year I have 3 of my children's birthdays to think of, my husbands birthday and our wedding anniversary. Not to mention my dad and brother's birthday.

Double Chocolate Mousse Cake

Ingredients
450g/1lb plain chocolate, broken into pieces (or use choc chips)
450g/1lb butter, cut into cubes
200g/7oz castor sugar
200g/7oz single cream (thickened cream)
8 eggs

Chocolate Glaze
175g/ 6oz plain chocolate chips
30g/ 1oz butter
3 tablespoon milk
2 tablespoon golden syrup

Last Minute

So it looks like I have left the wrapping of presents to the last minute! 

I had been planning to do it all this week but have been distracted by too many other things and now I will be wrapping presents the night before Christmas Eve. I think this is the closest I have ever left it, I always thought doing it on the weekend before Christmas was late but this is cutting it close.
