Pikelets for a crowd



The good old Aussie pikelet! Loved by most, especially my kids, and such a quick and easy snack, meal, lunchbox treat and sweet or savoury food. Spread it with jam & cream, butter or a dollop of cream cheese and they will all be gone in a flash. Try this easy recipe and enjoy! 








2 cups plain flour
4 teaspoons baking powder
2 pinches bicarbonate of soda
1/2 cup caster sugar
2 eggs lightly beaten
1 1/2 cups milk

1. Combine dry ingredients in a large bowl. Add egg and milk gradually and stir until mixture is a smooth, creamy pouring consistency.

2. Heat greased frypan to medium heat. Drop dessert spoons of batter into pan allowing enough room for spreading. When bubbles form on pikelets, flip and cook until lightly brown on other side.

These are best made just before serving.
Best served while they are still warm, with jam & cream.
