Mild Spicy Hearty Beef Stew


Splash of olive oil
1 onion
2 small chillies
1 tspn Cajun Seasoning
4 cups beef stock
1 tin diced tomatoes
1 kilo beef steak diced
10 small red potatoes quartered
A shake of Salt & Pepper


Add olive oil, onion, chilli & Cajun seasoning to pot and fry, until onion is clear. 

Add beef and fry until seared and coated in seasoning. Add salt & pepper.

Add beef stock and diced tomatoes.

Then add potatoes.

Cover and simmer, stirring occasionally for 2 hours or until meat is tender and potatoes are soft. The sauce will thicken while simmering.

Serve with steamed corn cobs & Green beans.
