Easy Chicken Cacciatore With Rice

The quantaties I used to create this dish were enough to feed a family of 10, so if you are feeding less people just halve the ingredients.

Pre heat oven temperature to 180 degrees Celsius


6 Maryland Chicken Pieces or 16 - 20 Chicken Drumsticks
1 Litre Chicken stock
1 Can Chopped Tomato 
1 250ml Jar Pasta Sauce
2 Tblspns Tomato Paste
2 tspns Mixed Herbs
250 grms Frozen Mixed Vegetables
Salt & Pepper

1. Place the chicken in a casserole dish. 
2. Spread vegetables over and around the chicken. 
3. Sprinkle salt and pepper on chicken pieces.  
4. Mix together chicken stock, tomatoes, tomato paste, pasta     sauce & mixed herbs. 
5. Pour stock mixture over the chicken and vegetables.
6. Cover with aluminium foil.
7. Place in oven and cook for 1 hour.
8. After 1 hour remove foil and cook for a further 30 mins.

Serve with rice and pour the juices in the casserole dish over the chicken and the rice if you desire.
