ANZAC Biscuits




"Did you know it is said that ANZAC biscuits were sent by wives to the soldiers at war because the ingredients did not spoil easily."







This is a family favourite! I love baking the good ol' ANZAC biscuit as the recipe is so quick and easy. They are a great lunch box extra and great for when friends drop around. The Anzac biscuit can also be frozen and thawed when needed.

1 Cup Rolled Oats
1 Cup Plain Flour
1 Cup Sugar
3/4 Cup Coconut
125 grm Butter
1 Tblspn Golden Syrup
1 Teaspoon Bi-Carb Soda
2 Tblspns Boiling Water

1. Heat oven to 180 degrees celcius
2. In a large bowl combine oats, sifted flour, sugar and coconut.
3. Combine butter and golden syrup in pan, stir over low heat until butter is melted. (To make this quicker I melt it in the microwave). 
4. Combine Bi-Carb Soda & boiled water then add to butter mixture.
5. Stir into dry ingredients while mixture is warm.
6. Grease oven trays.
7. Place spoonfuls  of mixture on tray.
8. Bake in oven for about 10 - 15 minutes, or until golden brown.
9. Remove from oven and allow to cool a little before placing on wire cooling racks.

Then gobble them all up!
