Easy Chunky Chicken Pie


1 tablespoon olive oil

3 chicken breasts diced

2 cans Cream of Chicken condensed soup

1 - 2 cups corn kernels or mixed vegetables

4 sheets puff pastry

Salt & pepper
Sausage Rolls


1. Heat oven to 220 degrees Celsius or 200 for fan forced oven.

2. Grease large casserole dish

3. Place two sheets of puff pastry in base of dish

4. Trim edges and place on sides if pastry does not reach top of casserole dish. Prick with fork and cook in oven for 20 minutes

5. Remove from oven

6. While pastry is baking fry chicken in large pot with olive oil

7. Add seasoning (Salt & Pepper)

8. Add the soup and mix through

9. Add the corn or vegetables

10. Simmer for 5 mins and remove from heat. Pour into casserole dish

11. Place two sheets of puff pastry on top. Trim edges, prick with a fork and use trimmed pastry for decoration.

12. Brush with cooking oil

13. Place in oven and cook for 20 mins

14. Serve with your favourite side dish
